Cheeseburger Soup

Since it's January 3rd, most people are kickin' into healthy gear. By January 15th that may have considerably subsided, but still, let's ride the self-control wave while we can, bros!

In my opinion, burgers are the best way of honoring cows. Forget about steak--that's for the richies with tenured university professorships. My significantly less-wealthy grad student arm will always reach for a quality cheeseburger. And stray sidewalk quarters.

Real talk!

Here's a cheeseburger recipe that's a tad healthier than the typical sandwich presentation. Considering I nestled 50% off holiday candy next to a set of weights in my Target cart, I'll probably need this soup's salvation.
Cheeseburger Soup   Makes about 2 servings
1 can condensed cheddar soup
1 cup milk
1/4 lb. lean ground beef
1/4 small onion, chopped
1/2 of a 15oz. can chopped tomatoes, drained
1 green onion, sliced (green part only)
Salt and pepper
1.) Brown the ground beef and onion in a small skillet over medium heat. Drain the fat from the skillet. Remove beef from the heat and set aside.
2.) In a small soup pot, heat the cheddar soup and milk until warmed through. Stir in the drained tomatoes, beef, and a pinch of salt and pepper. Top with sliced green onion.

  1. I love this! Such a great idea. We eat way too many burgers too. And yes- totally forget those richie professors who can eat steak. Jerks.

  5. Really interesting idea. Just the other day I was wondering if anyone had a hamburger soup recipe, and here you are! Would be cool with a french fried onion ring garnish. Anyway, thanks for this.
